Q: Is it Peasant or Pheasant?
It's Peasant (the person) not Pheasant (the bird).
Q: Why did you name your business Peasant’s Pantry?
A traditional pantry or larder was pickles, cured meats, hams, salamis – all things necessary to sustain people through the seasons and all of which are the types of things we sell. We have a strong emphasis on local ingredients and traditional nose-to-tail butchery and recipes, including old world charcuterie.

Q: When did you start Peasant’s Pantry?
Joseph spent most of 2011 renovating an outbuilding at his home at the time, testing recipes and verifying processes, getting provincial inspectors to sign off, etc. and launched the business with a friends-and-family gathering in November 2011. The first full year of business for Peasant’s Pantry was 2012.
Q: When did Peasant’s Pantry become a deli?
We purchased 4491 Highway 12, New Ross in Spring 2014 and renovated it on our days off, opening the deli June 27, 2014 (Canada Day weekend).
Q: Why did you open the deli?
Initially, Peasant’s Pantry was a one-man production and sales operation with Joseph doing all nose-to-tail butchery to make all the specialty meats in his provincially-inspected processing shop and then selling the specialty meats at the weekly Wolfville Farmers’ Market.
Moving and expanding the business was always the plan. As a traditional deli, we could offer in-house butcher cuts (pork chops, steaks, etc.) for sale, still make all our specialty meats but sell them on-site as well as to our restaurant wholesale customers and at markets, plus run a menu focused on using local ingredients, like our own meats, and preparing everything from scratch for eat-in/take-out in a friendly, casual atmosphere.

Q: Why New Ross?
a.k.a. Why not Halifax (or insert other town or city here)?
We get this question a lot. Maybe it shouldn’t surprise us how often, but it still does. Answer:
Economically and logistically it makes sense.
1. As a small independent business, we could afford to purchase a property in New Ross that would accommodate all aspects of the deli under one roof and with space for parking and outdoor dining.
2. Highway 12 is very busy with commuters, locals and vacationers.
3. New Ross is central among our suppliers and customers: we have been purchasing NS meat, produce and other ingredients and delivering to restaurants in the Valley, HRM and the South Shore since starting the business.
4. New Ross is a good fit for our business practices and values.
Q: Are you really open year-round?
Our hours change slightly seasonally, but we are open year-round serving our seasonally-inspired menu, preparing our meats, and supplying other restaurants.
Q: Are your meats really gluten-free? Even the sausages?
Occasionally we run a special limited-run item which is not gluten-free.
Q: Is your menu gluten-free?
No, it’s gluten-free friendly.
We have gluten-free bread and buns available which can be used to convert most of our sandwiches & burgers to gluten-free. We also offer gluten-free fries, popcorn, salads and (usually) soups. One of our desserts is also gluten-free.
Q: Can vegetarians eat at Peasant’s Pantry?
We have a fantastic falafel we make from scratch using local yellow-eyed beans. We also offer seasonal salad(s) and at least 1 of our soups each week is vegetarian, not to mention our popcorn, desserts and famous fries.
Q: Can people who are allergic to gluten/eggs/dairy/mustard seed/peanuts/tree nuts etc. eat your food?
Yes - just ask us for help when purchasing/ordering.
Making thing from scratch means we know exactly what's in it. If you have an allergy, tell our staff and they will help you select menu items and meats. We also have a list of common food sensitivites online, which is a good starting place but it's not exhaustive, so ask us!
